Ingredients
- 2 large spaghetti squash
- 2 cups broccoli florets
- 2 Tbsp olive oil
- 1 16-oz jar Alfredo sauce
- 1 cup shredded mozzarella cheese
Instructions
- Preheat your oven to 400°F (204°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with most of the olive oil.
- Place the squash cut-side down on a baking sheet; add broccoli florets drizzled with remaining olive oil.
- Roast for about 30 minutes until fork-tender and lightly browned.
- Flip the squash, cool slightly, then scrape strands with a fork.
- In a large bowl, combine spaghetti squash strands, roasted broccoli, Alfredo sauce, and half of the mozzarella cheese. Transfer to a casserole dish and top with remaining cheese.
- Broil for a few minutes until golden.
