Ingredients
- 2 lb boneless skinless chicken thighs
- 6 garlic cloves, thinly sliced
- 3 inches fresh ginger, peeled and finely chopped
- 1 bundle scallions (6 to 8 oz), sliced
- 10 cups water
- 8 oz dried ramen or curly noodles
- 1 cup carrot, cut into thin matchsticks
- kosher salt, to taste
- black or white pepper, to taste
- 1/4 cup black rice vinegar
- 1/4 cup soy sauce
- 2 tbsp toasted sesame oil
- crispy chili oil, to taste
Instructions
- Prepare all ingredients: slice garlic and scallions, chop ginger and carrots.
- In a large pot over medium heat, cook chicken thighs in water seasoned with salt and pepper. Bring to a boil then simmer for 15 minutes until cooked.
- Remove chicken, shred it into bite-sized pieces, then sauté garlic, ginger, and white parts of scallions in the same pot until fragrant (2-3 minutes).
- Return chicken to the pot along with vinegar, soy sauce, sesame oil, and carrots; bring to boil.
- Add noodles and cook according to package instructions until tender.
- Serve hot garnished with green scallion tops and a drizzle of crispy chili oil if desired.
