  • 2 lb boneless skinless chicken thighs
  • 6 garlic cloves, thinly sliced
  • 3 inches fresh ginger, peeled and finely chopped
  • 1 bundle scallions (6 to 8 oz), sliced
  • 10 cups water
  • 8 oz dried ramen or curly noodles
  • 1 cup carrot, cut into thin matchsticks
  • kosher salt, to taste
  • black or white pepper, to taste
  • 1/4 cup black rice vinegar
  • 1/4 cup soy sauce
  • 2 tbsp toasted sesame oil
  • crispy chili oil, to taste

Instructions

  1. Prepare all ingredients: slice garlic and scallions, chop ginger and carrots.
  2. In a large pot over medium heat, cook chicken thighs in water seasoned with salt and pepper. Bring to a boil then simmer for 15 minutes until cooked.
  3. Remove chicken, shred it into bite-sized pieces, then sauté garlic, ginger, and white parts of scallions in the same pot until fragrant (2-3 minutes).
  4. Return chicken to the pot along with vinegar, soy sauce, sesame oil, and carrots; bring to boil.
  5. Add noodles and cook according to package instructions until tender.
  6. Serve hot garnished with green scallion tops and a drizzle of crispy chili oil if desired.
