Ingredients
- 1.5 lbs baby potatoes, halved
- 3 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp garlic powder
- ½ tsp salt
- ½ tsp black pepper
- 200 g block feta cheese
- 1 cup cherry tomatoes, halved
- Fresh basil or parsley for garnish
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, toss halved potatoes with olive oil, oregano, garlic powder, salt, and black pepper until well-coated.
- Spread the seasoned potatoes on the baking sheet and place the feta block in the center. Scatter cherry tomatoes around.
- Bake for 25–30 minutes or until potatoes are tender and lightly golden.
