  • 1 head cauliflower (about 2 lbs), cut into 1-inch florets
  • 2¾ cups all-purpose flour (divided)
  • 1½ cups water
  • Garlic powder
  • Salt
  • Oranges (2), juiced and zested
  • Ketchup
  • Granulated sugar
  • White vinegar
  • Minced garlic

Instructions

  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. In a bowl, mix 1½ cups flour, garlic powder, and salt; set aside.
  3. In another bowl, whisk together 1¼ cups flour, water, oil, salt, garlic powder, and cornstarch until smooth.
  4. Dredge cauliflower florets in batter then coat with seasoned flour before placing on the baking sheet.
  5. Bake for 10 minutes, flip the florets, then bake for another 10 minutes until golden brown.
  6. Combine orange juice and zest, ketchup, sugar, vinegar in a bowl; set aside.
  7. Sauté minced garlic with red pepper flakes in a saucepan; add the orange mixture and bring to boil.
  8. Stir in cornstarch slurry until thickened; toss baked cauliflower in sauce before serving.
