  • 1 pound skinless salmon
  • ½ medium onion
  • ¼ cup + 2 tablespoons whole wheat panko breadcrumbs
  • 3 tablespoons minced cilantro
  • 1 egg white
  • 2 garlic cloves
  • ¾ teaspoon salt
  • ½ teaspoon ground pepper
  • ½ teaspoon paprika
  • ½ teaspoon ground oregano
  • ¾ California avocado
  • 3 tablespoons fat-free plain Greek yogurt
  • ½ lime (juiced)
  • 5 tablespoons water
  • ¼½ teaspoon chipotle chili powder
  • ¼ teaspoon salt (or to taste)
  • ¼ teaspoon ground pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a food processor, combine salmon, grated onion, breadcrumbs, cilantro, egg white, garlic, salt, pepper, paprika, and oregano. Pulse until mixed but slightly chunky.
  3. Form mixture into one-inch meatballs and place on a parchment-lined baking sheet.
  4. Bake for about 18 minutes until cooked through and golden brown.
  5. While baking, blend avocado, Greek yogurt, garlic, lime juice, water, cilantro, chipotle powder, salt, and pepper until smooth.
  6. Serve warm with creamy avocado sauce.
