Ingredients
- 1 pound skinless salmon
- ½ medium onion
- ¼ cup + 2 tablespoons whole wheat panko breadcrumbs
- 3 tablespoons minced cilantro
- 1 egg white
- 2 garlic cloves
- ¾ teaspoon salt
- ½ teaspoon ground pepper
- ½ teaspoon paprika
- ½ teaspoon ground oregano
- ¾ California avocado
- 3 tablespoons fat-free plain Greek yogurt
- ½ lime (juiced)
- 5 tablespoons water
- ¼ – ½ teaspoon chipotle chili powder
- ¼ teaspoon salt (or to taste)
- ¼ teaspoon ground pepper
Instructions
- Preheat the oven to 400°F (200°C).
- In a food processor, combine salmon, grated onion, breadcrumbs, cilantro, egg white, garlic, salt, pepper, paprika, and oregano. Pulse until mixed but slightly chunky.
- Form mixture into one-inch meatballs and place on a parchment-lined baking sheet.
- Bake for about 18 minutes until cooked through and golden brown.
- While baking, blend avocado, Greek yogurt, garlic, lime juice, water, cilantro, chipotle powder, salt, and pepper until smooth.
- Serve warm with creamy avocado sauce.
