- 2 1/2 teaspoons active dry yeast
- 4 1/2 cups all-purpose flour
- 1/4 cup unsalted butter (melted)
- 2 quarts water (plus additional for boiling)
- 2/3 cup baking soda
- 1 egg yolk
- Pretzel salt or kosher salt for sprinkling
Instructions
- Combine warm water, brown sugar, and kosher salt in a bowl. Add yeast; let sit until bubbly (about 10 minutes).
- Mix in flour and melted butter using a stand mixer with a dough hook until smooth (about 4 minutes).
- Shape the dough into a ball, coat with oil, cover, and let rise in a warm place for an hour until doubled.
- Boil water mixed with baking soda in a large pot. Preheat the oven to 450°F and prepare baking sheets lined with parchment paper.
- Divide the dough into eight portions. Roll each portion into a snake, shape into pretzels.
- Boil each pretzel for 30 seconds before placing on prepared sheets.
- Brush with an egg wash and sprinkle with salt before baking for 12-14 minutes until golden brown.
