Ingredients
- 2 packages Applegate Naturals® Grilled Chicken Breast Strips (or about 3 cups, cubed)
- 1/2 cup fresh blueberries
- 1/3 cup diced celery
- 1/4 cup diced red onion
- 1/4 cup chopped walnuts
- 1 Tbsp. chopped fresh rosemary
- 1/3–1/2 cup mayonnaise (Primal Kitchen or homemade)
- Sea salt & pepper to taste
- 2 green onions, sliced (white and light green parts)
- Fresh lemon wedges (optional)
Instructions
- Prepare the chicken by removing it from the packaging and cutting it into cubes.
- In a large mixing bowl, combine the chicken with blueberries, celery, red onion, walnuts, rosemary, and green onions.
- Add mayonnaise starting with 1/3 cup; mix gently until well combined. Adjust mayo to your taste.
- Serve immediately in lettuce wraps or over greens, garnished with lemon wedges if desired.
