Description

Ingredients

  • 2 cups blueberries (fresh or frozen)
  • 1 cup + 2 Tbsp blueberry juice (or grape/apple juice)
  • 1/3 cup granulated sugar
  • 4 tsp cornstarch
  • 1 Tbsp lemon juice

Instructions

  1. In a small saucepan, combine blueberries, 1 cup of juice, and sugar. Stir well and bring to a simmer over medium-high heat.
  2. Reduce the heat to low and let it simmer for 6 to 10 minutes until many blueberries burst.
  3. In a bowl, whisk together the remaining juice and cornstarch, then add it to the saucepan. Simmer for another minute until thickened.
  4. Remove from heat and stir in lemon juice for brightness.
  5. If desired, strain through a mesh sieve for a smooth consistency or serve as is.
