- 1 cup + 2 Tbsp blueberry juice (or grape/apple juice)
- 1/3 cup granulated sugar
- 4 tsp cornstarch
- 1 Tbsp lemon juice
Instructions
- In a small saucepan, combine blueberries, 1 cup of juice, and sugar. Stir well and bring to a simmer over medium-high heat.
- Reduce the heat to low and let it simmer for 6 to 10 minutes until many blueberries burst.
- In a bowl, whisk together the remaining juice and cornstarch, then add it to the saucepan. Simmer for another minute until thickened.
- Remove from heat and stir in lemon juice for brightness.
- If desired, strain through a mesh sieve for a smooth consistency or serve as is.
