  • 12 Hawaiian sweet rolls
  • 1 pound thick-cut bacon
  • 12 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup milk
  • 2 tablespoons melted butter
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper, arrange bacon in a single layer, and bake until crispy (15-20 minutes). Drain and crumble.
  2. Whisk eggs and milk in a large bowl; season with salt and pepper. Melt butter in a non-stick skillet over medium heat; add egg mixture, stirring until just set. Stir in cheeses.
  3. Preheat oven to 350°F (175°C). Slice the Hawaiian rolls horizontally; place the bottom half in a baking dish. Spread egg mixture over the rolls, top with crumbled bacon, then place the top half of the rolls on.
  4. Mix melted butter with Dijon mustard and garlic powder; brush over the tops of the rolls.
  5. Cover with foil and bake for 15 minutes; remove foil and bake an additional 5-10 minutes until golden brown.
