  • 6 boneless center cut pork chops
  • 1 1/2 cups buttermilk
  • 2 cups Panko crumbs
  • 1/3 cup all-purpose flour
  • 1/2 cup freshly grated Parmesan cheese
  • 3 tablespoons olive oil
  • 2/3 cup chicken broth
  • 2 tablespoons freshly grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika

Instructions

  1. Marinate the pork chops in buttermilk in a large ziptop bag for at least 2 hours (up to 24 hours).
  2. Preheat the oven to 325°F.
  3. In a mixing bowl, combine Panko crumbs, flour, Parmesan cheese, garlic powder, salt, pepper, and paprika.
  4. Remove the pork from the marinade, season lightly with salt and pepper, then coat each chop in the Panko mixture.
  5. Heat olive oil in an oven-proof skillet over medium-high heat and sear the chops until golden brown on both sides (about 2-3 minutes per side).
  6. Pour chicken broth around the chops in the skillet and sprinkle with extra Parmesan. Transfer to the oven and bake for about 20 minutes until cooked through.
