  • 10 large eggs
  • ½ cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tsp hot sauce
  • 2 tsp smoked paprika
  • 1 tsp cayenne pepper
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¼ tsp granulated sugar (optional)
  • 20 medium shrimp (peeled and deveined)
  • 2 tbsp olive oil
  • 1 jalapeño (thinly sliced)
  • 2 tbsp chopped fresh chives
  • Lemon wedges (for serving)

Instructions

  1. Hard boil the eggs by placing them in a saucepan, covering with water, then bringing to a boil. Remove from heat and let sit covered for 12 minutes before cooling under cold water.
  2. Peel the eggs and separate the yolks into a bowl; mash yolks until smooth.
  3. Mix mashed yolks with mayonnaise, mustard, hot sauce, smoked paprika, cayenne pepper, oregano, garlic powder, onion powder until smooth; chill.
  4. Season the shrimp with remaining spices and sauté in olive oil over medium-high heat for about 2 minutes per side until cooked through.
  5. Fill egg whites with chilled yolk mixture, top with shrimp and garnish with jalapeño slices and chives.
