  • 9 oz Digestive Biscuits or Graham Crackers
  • 1 stick (8 Tbsp) Butter
  • 2 cups Heavy Whipping Cream
  • 9 oz Cream Cheese
  • 1/2 cup Powdered Sugar
  • 12 tsp Peppermint Essence
  • 5 Candy Canes (crushed)

Instructions

  1. Prepare the crust by crushing biscuits and mixing with melted butter. Press into a lined springform pan and refrigerate.
  2. In one bowl, whip heavy cream until soft peaks form. In another bowl, beat room temperature cream cheese and powdered sugar until fluffy. Fold in whipped cream, peppermint essence, and crushed candy canes.
  3. Pour filling over the crust in the springform pan. Smooth the top with an offset spatula.
  4. Chill for 4-6 hours or overnight until set.
  5. Carefully remove from the pan, slice, and serve with whipped cream and extra crushed candy canes.
