  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon unsalted butter (softened)
  • 1 large egg yolk
  • 1/4 cup white wine (or vinegar)
  • Oil for frying
  • 1 cup ricotta cheese (drained)
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a bowl, combine flour, granulated sugar, cinnamon, and salt. Add softened butter, egg yolk, and white wine; mix until dough forms.
  2. Knead the dough on a floured surface for about 5 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.
  3. Roll out the dough to about 1/8 inch thick and cut into 3-inch circles.
  4. Heat oil in a deep skillet to 350°F (175°C). Wrap each circle around a cannoli tube and seal edges with water.
  5. Fry for 2–3 minutes until golden brown; drain on paper towels.
  6. In another bowl, blend ricotta cheese, powdered sugar, vanilla extract until smooth; fold in mini chocolate chips if desired.
  7. Cool the shells completely before filling them with the ricotta mixture using a piping bag.
  8. Dust with powdered sugar before serving.
