  • 3 ripe bananas, sliced thick
  • 1/2 cup brown sugar
  • 3 tbsp butter
  • 1/3 cup brown sugar
  • 2 tbsp butter
  • 2 tbsp dark rum
  • 1 tsp cornstarch (optional, for thickening)

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter; press into a springform pan and bake for 8 minutes.
  2. Lower oven to 325°F (163°C). Beat cream cheese until smooth; gradually add sugar, then eggs one at a time. Stir in sour cream and vanilla.
  3. Pour filling over cooled crust and bake for 55-65 minutes until edges are set.
  4. Cool cheesecake gradually in the oven with the door ajar for an hour, then chill for at least 4 hours.
  5. In a skillet, melt butter with brown sugar; add banana slices and cook until golden.
  6. For the rum glaze, melt butter with brown sugar in a saucepan; stir in dark rum and simmer briefly.
  7. Top chilled cheesecake with caramelized bananas and drizzle with warm rum glaze before serving.
