Instructions
- Preheat oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter; press into a springform pan and bake for 8 minutes.
- Lower oven to 325°F (163°C). Beat cream cheese until smooth; gradually add sugar, then eggs one at a time. Stir in sour cream and vanilla.
- Pour filling over cooled crust and bake for 55-65 minutes until edges are set.
- Cool cheesecake gradually in the oven with the door ajar for an hour, then chill for at least 4 hours.
- In a skillet, melt butter with brown sugar; add banana slices and cook until golden.
- For the rum glaze, melt butter with brown sugar in a saucepan; stir in dark rum and simmer briefly.
