- 32 oz frozen shredded hashbrowns
- 1 can (10.5 oz) cream of chicken soup
- 2 cups sour cream
- 2 cups shredded sharp cheddar cheese
- 1 medium yellow onion, finely chopped
- 6 tbsp butter (divided)
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups crushed cornflakes
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, melt 2 tablespoons of butter over medium heat and sauté the chopped onion until soft and golden brown.
- In a large mixing bowl, combine cream of chicken soup, sour cream, and shredded cheddar cheese. Add sautéed onions and 2 tablespoons of melted butter; mix well.
- Stir in salt and pepper.
- Gently fold in the frozen hashbrowns until evenly coated.
- Transfer the mixture to a greased 9×13-inch baking dish.
- In a small bowl, mix crushed cornflakes with remaining melted butter; sprinkle over the potato mixture.
- Bake uncovered for about 45 minutes or until bubbly and golden brown on top.
