Description

Cheesy Funeral Potatoes are the ultimate comfort food, perfect for any gathering. With a golden, buttery crust and a creamy center filled with hashbrowns, sharp cheddar cheese, sour cream, and sweet sautéed onions, this dish is both satisfying and easy to prepare.

  • 32 oz frozen shredded hashbrowns
  • 1 can (10.5 oz) cream of chicken soup
  • 2 cups sour cream
  • 2 cups shredded sharp cheddar cheese
  • 1 medium yellow onion, finely chopped
  • 6 tbsp butter (divided)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups crushed cornflakes

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, melt 2 tablespoons of butter over medium heat and sauté the chopped onion until soft and golden brown.
  3. In a large mixing bowl, combine cream of chicken soup, sour cream, and shredded cheddar cheese. Add sautéed onions and 2 tablespoons of melted butter; mix well.
  4. Stir in salt and pepper.
  5. Gently fold in the frozen hashbrowns until evenly coated.
  6. Transfer the mixture to a greased 9×13-inch baking dish.
  7. In a small bowl, mix crushed cornflakes with remaining melted butter; sprinkle over the potato mixture.
  8. Bake uncovered for about 45 minutes or until bubbly and golden brown on top.
