  • 1 cup pepper jack cheese (freshly shredded)
  • 3 medium jalapeños (seeded and finely diced)
  • 1 teaspoon garlic (minced)
  • ½ cup flour
  • ¼ teaspoon Kosher salt
  • ¼ teaspoon pepper
  • 2 large eggs (room temperature)
  • 2 teaspoons water
  • 1 cup plain bread crumbs
  • ½ teaspoon garlic powder
  • ½ teaspoon cayenne pepper
  • Vegetable or canola oil (for frying)

Instructions

  1. In a mixing bowl, combine Monterey jack cheese, pepper jack cheese, diced jalapeños, and garlic until well mixed.
  2. Roll the mixture into one-inch balls and place on a parchment-lined baking sheet.
  3. Set up three bowls: one with flour mixed with salt and pepper; another with beaten eggs; and the third with seasoned bread crumbs.
  4. Coat each cheese ball in flour, dip in the egg wash, then roll in bread crumbs until fully covered.
  5. Heat oil in a frying pan over medium heat until shimmering. Fry the bites in batches for about 2-3 minutes or until golden brown. Drain on paper towels before serving.
