  • 1/2 pound boneless skinless chicken (drumsticks recommended)
  • 2 teaspoons soy sauce
  • 1 tablespoon sake (or water)
  • 1/4 teaspoon baking soda
  • 1 teaspoon cornstarch
  • 1 ½ tablespoons soy sauce
  • 1 tablespoon mirin
  • 1 tablespoon brown sugar (firmly packed)
  • 1 tablespoon oil
  • 1 tablespoon minced garlic
  • 1/2 teaspoon salt
  • 2 tablespoons furikake (optional)
  • 1 sheet nori (cut into small rectangles)

Instructions

  1. Prepare the sushi rice by mixing it with salt and furikake (optional).
  2. Cut the chicken into small pieces and marinate with soy sauce, sake, baking soda, and cornstarch; refrigerate for 30 minutes.
  3. Cook the marinated chicken in a nonstick pan until fully cooked.
  4. Add garlic and teriyaki sauce mixture; cook until thickened.
  5. Shape onigiri: Wet hands, scoop rice into palms, add chicken filling, cover with more rice, then shape into triangles and wrap with nori.
