  • 4 cups fresh spinach
  • 2 cups mushrooms, sliced
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup parmesan cheese, grated
  • Olive oil, salt, pepper, Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13 inch casserole dish.
  2. In a skillet, heat olive oil over medium heat. Sauté onions and mushrooms for 5-7 minutes until soft; add garlic and cook for another minute. Stir in spinach until wilted; season with salt, pepper, and Italian seasoning.
  3. Spread cooked chicken in the bottom of the casserole dish and top with the sautéed vegetable mixture.
  4. Pour heavy cream over the top and sprinkle with mozzarella and parmesan cheese.
  5. Bake uncovered for 20-25 minutes until cheese is melted and golden brown.
