Instructions

  1. Prepare the chimichurri by finely chopping parsley and cilantro, then mixing with minced garlic, olive oil, red wine vinegar, salt, pepper, and red chili flakes. Let sit for 15 minutes.
  2. Make the garlic sauce by whisking together mayonnaise, lemon juice, minced garlic, salt, and black pepper until smooth.
  3. Marinate the chicken thighs in olive oil, salt, pepper, and chimichurri for at least 30 minutes.
  4. Grill the marinated chicken on medium-high heat for about 5–7 minutes on each side until fully cooked.
