  • 1 red bell pepper
  • 1 red onion
  • 3 cups potatoes
  • 3 tbsp olive oil
  • 1 tbsp paprika
  • 2 tsp basil
  • 3 tsp garlic powder
  • 3 tsp oregano
  • 1 tsp dill
  • 1 tsp parsley
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cucumber
  • 2 cups yogurt
  • 1/2 cup cashews
  • 1 cup tofu
  • 2 garlic cloves
  • 2 tbsp red wine vinegar
  • 1/4 cup dill
  • 1 tsp lemon juice

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, drain and rinse chickpeas. Chop the bell pepper, onion, and potatoes into bite-sized pieces.
  3. Combine vegetables and chickpeas in the bowl. Drizzle with olive oil and sprinkle with spices; toss until evenly coated.
  4. Spread onto a baking sheet and roast for 30-40 minutes until golden brown.
  5. While roasting, sauté cubed tofu until golden and mix yogurt with minced garlic and herbs.
  6. Assemble bowls by layering roasted vegetables, topped with sautéed tofu, yogurt mixture, diced cucumber, and cashews.
