Ingredients
- 1 can chickpeas
- 1 red bell pepper
- 1 red onion
- 3 cups potatoes
- 3 tbsp olive oil
- 1 tbsp paprika
- 2 tsp basil
- 3 tsp garlic powder
- 3 tsp oregano
- 1 tsp dill
- 1 tsp parsley
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cucumber
- 2 cups yogurt
- 1/2 cup cashews
- 1 cup tofu
- 2 garlic cloves
- 2 tbsp red wine vinegar
- 1/4 cup dill
- 1 tsp lemon juice
Instructions
- Preheat your oven to 425°F (220°C).
- In a mixing bowl, drain and rinse chickpeas. Chop the bell pepper, onion, and potatoes into bite-sized pieces.
- Combine vegetables and chickpeas in the bowl. Drizzle with olive oil and sprinkle with spices; toss until evenly coated.
- Spread onto a baking sheet and roast for 30-40 minutes until golden brown.
- While roasting, sauté cubed tofu until golden and mix yogurt with minced garlic and herbs.
- Assemble bowls by layering roasted vegetables, topped with sautéed tofu, yogurt mixture, diced cucumber, and cashews.
