- 2 tablespoons olive oil
- 1 large onion
- 3 cloves garlic
- 1 teaspoon turmeric
- 6 cups vegetable broth
- 1 cup lentils
- 1 can chickpeas
- 1 cup navy beans
- 1 cup kidney beans
- 8 ounces Persian noodles or linguine
- 2 cups spinach

- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Sauté chopped onion until translucent; add minced garlic and turmeric for an additional minute until fragrant.
- Pour in vegetable broth and bring to a simmer. Add lentils, chickpeas, navy beans, and kidney beans. Cook for about 15 minutes.
