  • 1 large onion
  • 3 cloves garlic
  • 1 teaspoon turmeric
  • 6 cups vegetable broth
  • 1 cup lentils
  • 1 can chickpeas
  • 1 cup navy beans
  • 1 cup kidney beans
  • 8 ounces Persian noodles or linguine
  • 2 cups spinach
  • fresh herbs: cilantro, parsley, dill
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion until translucent; add minced garlic and turmeric for an additional minute until fragrant.
  2. Pour in vegetable broth and bring to a simmer. Add lentils, chickpeas, navy beans, and kidney beans. Cook for about 15 minutes.
  3. Stir in the Persian noodles and cook until tender, around 10 minutes.
  4. Mix in spinach and fresh herbs; allow everything to cook together for another 5 minutes until greens are wilted.
  5. Season with salt and pepper before serving hot with sour cream or yogurt on top.
