  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup low-fat cottage cheese
  • 1 cup chopped celery
  • ½ cup finely diced red onion
  • 2 tbsp Dijon mustard
  • 2 tbsp fresh herbs (dill or parsley)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Season the chicken breasts with salt and pepper and place them on the prepared baking sheet. Bake for 25-30 minutes until cooked through. Let cool for 5 minutes.
  3. While the chicken bakes, chop the celery and finely dice the red onion.
  4. Shred the cooled chicken into bite-sized pieces.
  5. In a large mixing bowl, combine shredded chicken, cottage cheese, chopped celery, diced onion, mustard, and herbs. Mix until well combined.
  6. Taste and adjust seasoning with salt and pepper as needed.
