- 1 lb lump crab meat (fresh or canned)
- 2 tbsp unsalted butter
- ½ cup onion (finely chopped)
- ½ cup celery (finely chopped)
- 3 cloves garlic (minced)
- 2 tbsp tomato paste
- 1 tsp Old Bay seasoning
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp cayenne pepper (optional)
- 2 tbsp all-purpose flour
- 2 cups seafood or chicken broth
- 1 ½ cups heavy cream
- 1 tbsp Worcestershire sauce
- 1 tbsp lemon juice
- 1 tsp fresh thyme (or ½ tsp dried)
Instructions
- In a large pot, melt butter over medium heat. Sauté onions, celery, and garlic for 3–4 minutes until soft.
- Stir in tomato paste, Old Bay seasoning, salt, black pepper, and cayenne pepper; cook for another 1–2 minutes.
- Add flour and mix continuously for about 1 minute to form a roux.
- Gradually add broth while stirring constantly; bring to a simmer and cook for about 10 minutes.
- Reduce heat and stir in heavy cream, Worcestershire sauce, lemon juice, and thyme; simmer gently for an additional 5 minutes.
- Fold in the crab meat and warm through for another 2–3 minutes.
- Taste and adjust seasonings as needed before serving hot.
