- 12 oz chicken breast (cut into 1-inch pieces)
- 6.5 cups chicken stock
- 0.75 cup orzo
- 1.5 lemons (juiced)
- 2 egg yolks
- 1 generous handful fresh dill
- 0.5 tsp dried oregano
- salt to taste
- black pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Sauté diced onion, carrot, celery, and minced garlic for about 5 minutes until softened.
- Stir in bay leaves and chicken pieces; cook for another 5 minutes until the chicken starts to brown. Pour in chicken stock and bring to a simmer.
- Add orzo and cook for 10-12 minutes until tender but slightly firm.
- In a separate bowl, whisk lemon juice with egg yolks. Gradually add hot soup broth while whisking continuously to temper the mixture.
- Slowly stir the tempered mixture back into the pot. Add fresh dill, oregano, salt, and pepper to taste. Heat through for a minute before serving.
