  • 1 large white onion
  • 6 cloves garlic
  • 4 cups vegetable broth
  • 1 ½ pounds sweet potatoes
  • 1 can full-fat coconut milk
  • Fresh kale
  • 2 tablespoons olive oil (divided)
  • 5 fresh sage leaves
  • 2 carrots
  • 1 ½ teaspoons smoked paprika
  • 1 can white beans
  • Salt and freshly-cracked black pepper to taste

Instructions

  1. In a large pot, heat 1 tablespoon of olive oil over medium-high heat. Brown the sausage, then set aside.
  2. Sauté diced onion in remaining oil for about 5 minutes; add minced garlic and cook until fragrant.
  3. Add vegetable broth, sage leaves, carrots, diced sweet potatoes, smoked paprika, white beans, and half of the cooked sausage. Simmer for 15 minutes until sweet potatoes are tender.
  4. Stir in coconut milk and chopped kale; cook for an additional 2 minutes until kale softens. Season with salt and pepper to taste.
  5. Serve warm with remaining sausage and optional toppings.
