Ingredients
- 600 g (1.3 lbs) potatoes, peeled and grated
- 80 g (¾ cup) mozzarella cheese, grated
- 2 large eggs
- 150 g (5 oz) baby spinach
- 200 g (7 oz) champignon mushrooms, sliced
- 100 g (1 cup) mozzarella cheese, grated
- 30 g (¼ cup) Parmesan cheese, grated
- Salt and pepper to taste
Instructions
- Preheat the oven to 200°C (390°F).
- In a large mixing bowl, combine grated potatoes, salt, pepper, oregano, eggs, parsley, and mozzarella cheese. Mix well.
- Grease a baking dish with olive oil and press the potato mixture evenly into the bottom and sides to form a crust.
- In a skillet over medium heat, heat olive oil and sauté mushrooms until soft. Add garlic and green onion; cook for another minute. Stir in spinach until wilted; season with salt, pepper, and oregano.
- Spread the mushroom-spinach filling over the crust. Top with remaining mozzarella cheese and Parmesan.
- Bake for 55 minutes until golden brown. Allow cooling slightly before serving.
