- 1 lb frozen edamame (shelled)
- 1 1/2 cups shredded red cabbage
- 2 cups finely chopped kale
- 2 large carrots, grated
- 1/4 cup chopped scallions
- 1/2 cup chopped cilantro
- natural creamy peanut butter
- rice vinegar
- honey or maple syrup
- toasted sesame oil
- low sodium soy sauce or tamari
- fresh ginger

Instructions
- Rinse quinoa under cold water. Cook with double the amount of water according to package instructions. Set aside.
- Microwave frozen edamame with a splash of water until tender; drain and cool.
- While quinoa cooks, shred cabbage and chop kale, carrots, scallions, and cilantro.
- In a small bowl, whisk together all dressing ingredients until smooth.
- In a large bowl, mix cooked quinoa, edamame, vegetables, and peanut dressing until well combined.
