Ingredients
- 2 cups cooked, shredded chicken
- 1 cup shredded cheddar cheese
- 1 cup shredded pepper jack cheese
- 12 small flour or corn tortillas
- Olive oil spray or 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper, to taste
- 1/4 cup chopped cilantro
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine shredded chicken, cheddar cheese, pepper jack cheese, cumin, chili powder, garlic powder, onion powder, salt and pepper.
- Warm tortillas in the microwave for easier rolling.
- Place about 2-3 tablespoons of filling on each tortilla and roll tightly.
- Place seam-side down on the baking sheet and lightly spray or brush with olive oil.
- Bake for 15-20 minutes until golden brown and crispy.
