Ingredients

  • 2 cups cooked, shredded chicken
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 12 small flour or corn tortillas
  • Olive oil spray or 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine shredded chicken, cheddar cheese, pepper jack cheese, cumin, chili powder, garlic powder, onion powder, salt and pepper.
  3. Warm tortillas in the microwave for easier rolling.
  4. Place about 2-3 tablespoons of filling on each tortilla and roll tightly.
  5. Place seam-side down on the baking sheet and lightly spray or brush with olive oil.
  6. Bake for 15-20 minutes until golden brown and crispy.
