Ingredients
- 1 cup quinoa
- 2 cups water
- 1 medium onion, diced
- 1 bell pepper, chopped
- 2 carrots, grated
- 1 zucchini, grated
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt to taste
- 1/2 cup breadcrumbs
- 1 egg (or flax egg for vegan option)
Instructions
- Cook quinoa by rinsing it under cold water. Combine with water in a saucepan, bring to a boil, then simmer covered for 15 minutes until water is absorbed. Let sit for another 5 minutes.
- While quinoa cooks, prepare the vegetables: dice onion and bell pepper, grate carrots and zucchini, and mince garlic.
- In a large mixing bowl, combine cooked quinoa with prepared vegetables, spices, breadcrumbs, and egg (or flax egg). Mix well.
- Form small patties (about 2-3 inches) from the mixture.
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Bake patties for 25-30 minutes until golden brown.
