  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • â…“ cup mayonnaise
  • â…“ cup sour cream
  • Zest and juice of 1 large lime
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)
  • ¼ teaspoon kosher salt

Instructions

  1. Prepare the dressing by mixing mayonnaise, sour cream, lime zest and juice, dill, mustard, garlic, salt, and pepper in a bowl. Set aside.
  2. Boil water in a large pot; add shrimp and cook for 2 to 3 minutes until pink.
  3. Transfer cooked shrimp to an ice water bath using a skimmer for quick cooling. Drain after 3 minutes.
  4. Chop the cooled shrimp into bite-sized pieces and combine with cucumber, green onions, and dressing in a mixing bowl.
  5. Stir gently until all ingredients are evenly coated.
