  • 3 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, whisk together eggs, sugars, vegetable oil, and vanilla until smooth.
  3. Fold in grated carrots.
  4. In another bowl, combine flour, spices, salt, baking powder, and baking soda. Gradually add this mixture to the wet ingredients until just combined. Fold in walnuts if desired.
  5. Pour batter into the prepared pan and bake for 30–35 minutes or until a toothpick comes out clean.
