  • 1 lb Ground chicken
  • 1 tsp Garlic powder
  • 1 tsp Paprika
  • Salt and black pepper to taste
  • 8 Small tortillas
  • 1 cup Shredded mozzarella or Monterey Jack cheese
  • 1 cup Shredded cabbage
  • ½ cup Chopped dill pickles
  • 2 tbsp Pickle brine
  • ½ cup Cottage cheese
  • 1 tsp Ranch seasoning
  • Juice from ½ lemon

Instructions

  1. In a mixing bowl, combine ground chicken, garlic powder, paprika, salt, and pepper; mix well and form into 8 balls.
  2. Heat a skillet over medium heat; place one tortilla in the skillet and sprinkle half with cheese.
  3. Add a chicken ball on top of the cheese; gently flatten it using a spatula.
  4. Cook until the cheese is golden brown (about 2 minutes), then flip and cook for another 3–4 minutes until the chicken is cooked through.
  5. In another bowl, mix shredded cabbage, chopped dill pickles, and pickle brine to prepare the slaw.
  6. Blend cottage cheese, ranch seasoning, and lemon juice until smooth for the drizzle.
  7. Assemble by topping each taco with pickle slaw and ranch drizzle before serving.
