  • 1 lb salmon, cubed
  • 1 ½ cups uncooked sushi rice
  • 3 large nori sheets
  • 1 tbsp light soy sauce
  • 1 tbsp Kewpie mayo
  • 1 tbsp sriracha
  • 1 tsp sesame oil

Instructions

  1. Cook the sushi rice according to package instructions. In a microwave-safe bowl, mix rice vinegar and sugar; heat until sugar dissolves. Pour over cooked rice and mix well.
  2. Preheat the oven to 400℉.
  3. In a mixing bowl, combine salmon, soy sauce, Kewpie mayo, sriracha, and sesame oil; mix well.
  4. Cut nori sheets into squares fitting muffin tins and lightly grease the tin.
  5. Press cooked sushi rice into each nori square in the muffin tin, then top with the salmon mixture.
  6. Bake for about 15 minutes until the salmon is cooked through and slightly golden brown.
  7. Allow to cool briefly before garnishing with furikake and chopped green onions.
