  • 0.5 cup sugar-free salsa
  • 0.25 cup full-fat sour cream
  • 2 tbsp fresh lime juice
  • 1 whole jalapeño (minced, adjust to taste)

Instructions

  1. In a large skillet over medium-high heat, cook the ground chicken until browned (5-6 minutes). Drain excess fat.
  2. Stir in taco seasoning and water; cook for an additional 2 minutes.
  3. Remove from heat and let rest for 5 minutes.
  4. Prepare cauliflower rice: microwave frozen rice or sauté fresh rice until tender (3-4 minutes).
