  • 1 cup whipping cream

  • 4 ounces melted white chocolate

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. For the crust, mix graham cracker crumbs, sugar, egg yolk, vanilla flavoring, and melted butter in a bowl. Press into a greased 9-inch springform pan and bake for 10 minutes. Let cool.
  3. In another bowl, beat cream cheese, sour cream, cornflour, sugar, vanilla extract, and vanilla seeds until smooth. Pour over the cooled crust and bake for about 30 minutes. Cool completely before refrigerating.
  4. To prepare the mousse topping, whip one cup of whipping cream with vanilla flavoring and confectioners’ sugar until soft peaks form. In another bowl, mix softened cream cheese with melted white chocolate until smooth. Gently fold in whipped cream until well combined.
  5. Spread the mousse over the chilled cheesecake layer and refrigerate for at least two hours before serving.
