  • 1 pound Canadian bacon, diced
  • 6 English muffins, split and cut into 1-inch pieces
  • 8 large eggs
  • 2 cups whole milk
  • 1/2 cup hollandaise sauce (store-bought or homemade)
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 3 teaspoons chopped fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish with non-stick cooking spray.
  2. Layer half of the Canadian bacon and half of the English muffin pieces in the prepared dish. Repeat with the remaining bacon and muffins.
  3. In a mixing bowl, whisk together eggs, milk, onion powder, salt, garlic powder, and black pepper until well combined. Pour over the layered ingredients.
  4. Cover with plastic wrap and refrigerate for at least 2 hours or overnight.
  5. Remove plastic wrap and sprinkle paprika on top before baking for 35-40 minutes until golden and set.
