  • 2 roma tomatoes, diced
  • 1 cucumber, minced
  • 1 stalk celery, minced
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh lime juice
  • 1.5 cups cold tomato and clam juice cocktail
  • 1 cup cold ketchup
  • 1 bunch cilantro, chopped
  • 2 avocados, diced

Instructions

  1. Prepare all vegetables by chopping the onion, dicing the tomatoes, mincing the cucumber, celery, and jalapeño.
  2. In a large mixing bowl, combine chopped onion with lime juice. Add cooked shrimp and diced vegetables. Season with salt and black pepper.
  3. In another bowl, mix together the tomato cocktail juice and ketchup until well blended. Stir in chopped cilantro and hot sauce.
  4. Pour the sauce over the shrimp mixture and gently fold until combined. Chill in the refrigerator for at least one hour.
