  • 1/2 cup all-purpose flour
  • 1/3 cup potato starch
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon five spice powder
  • 3/4 cup cold sparkling water
  • Neutral oil (for deep frying)
  • Additional salt
  • Furikake
  • Sweet chili sauce
  • Sriracha Mayo

Instructions

  1. Slice the dirt end of the enoki mushrooms about 1 inch above their base. Then slice the enoki mushrooms vertically into layers that are about 1/4 inch thick.
  2. In a heavy-bottomed pot, heat about 2–3 inches of neutral oil over medium-high heat until it reaches 375°F (190°C). While heating the oil, prepare a baking tray lined with a wire rack to place your fried mushrooms on.
  3. In a large mixing bowl, combine potato starch, all-purpose flour, baking powder, salt, white pepper, garlic powder, paprika, cayenne pepper, and five spice powder. Slowly whisk in cold sparkling water until well combined. Adjust consistency by adding more sparkling water if needed; it should coat the mushrooms but still run off slightly.
  4. Individually dredge each bunch of prepared enoki mushrooms in the batter. Let any excess batter drip off before carefully adding them to the hot oil. Ensure that they have space to fry properly without sticking together.
  5. Fry the enoki mushrooms for about 1–2 minutes or until they turn golden brown. Use a spider strainer to remove them from the oil and place them on the prepared wire rack to cool slightly.
  6. Season your crispy fried enoki mushrooms with salt and sprinkle furikake on top. Serve with your favorite dipping sauces like sweet chili sauce or sriracha mayo.
