Ingredients
- 4 green or slightly yellow plantains
- 4 cloves garlic, minced
- 2–3 tbsp olive oil or butter
- 1 lb medium shrimp, peeled and deveined
- Salt and pepper, to taste
- Optional: pork cracklings (chicharrón) for added crunch
Instructions
- Peel and cut the plantains into 1–2 inch pieces. Boil in salted water until tender (10–15 minutes) or fry for extra flavor.
- In a mortar and pestle, mash the boiled plantains with minced garlic, add olive oil or butter, season with salt and pepper, and mix in chicharrón if desired.
- In a skillet over medium heat, sauté garlic in butter or olive oil until fragrant. Add shrimp, season with salt and pepper, cooking until pink (about 3–4 minutes per side).
- Mold the mofongo onto plates, top with garlic shrimp, drizzle with pan juices, and garnish as desired.
