Ingredients
- 1 cup orzo
- 3 ears of corn
- 1 bunch green scallions
- 5 garlic cloves
- Zest and juice of 1 lemon
- 1/4 cup extra virgin olive oil
- 1/4 cup fresh dill
- 12 oz frozen edamame
- 3 cups baby arugula
Instructions
- Cook orzo in salted boiling water until al dente; drain and set aside.
- Grill corn on medium heat for about 10–12 minutes until charred. Cool and cut kernels off the cob.
- Sear white parts of scallions; sauté garlic in avocado oil until fragrant.
- Blend scallions, garlic, lemon zest and juice, olive oil, miso paste, and salt until smooth; mix in fresh dill.
- In a bowl, combine cooked orzo with corn, sliced scallions, edamame, arugula, and dressing; mix well.
