  • 3 Eggs (room temperature)
  • 1/3 cup Coconut Oil (liquid)
  • 10 oz Cream Cheese (room temperature)
  • 1/2 cup Granulated Sugar
  • 8 oz Cool Whip (thawed)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. In a large bowl, combine strawberry cake mix, guava nectar, eggs, and coconut oil. Mix on medium speed until blended.
  3. Pour batter into the prepared pan and bake for 25 minutes or until a toothpick comes out clean. Let cool completely.
  4. Beat cream cheese and sugar until smooth. Add vanilla extract and fold in Cool Whip.
  5. Spread cream cheese mixture over cooled cake.
  6. In a saucepan, combine guava nectar, sugar, cornstarch, and water; stir until thickened. Let cool slightly before pouring over the cream cheese layer.
