  • 1 clove garlic, minced
  • salt and pepper to taste
  • 1 tsp olive oil (for corn)
  • ½ tsp cumin
  • pinch of cayenne pepper
  • 1 tbsp chopped cilantro
  • crumbled cotija or feta cheese (for topping)
  • fresh cilantro or parsley (for topping)
  • lime wedges (for serving)

Instructions

  1. Marinate chicken in olive oil, lime juice, chili powder, smoked paprika, garlic, salt, and pepper for 20-30 minutes.
  2. Grill marinated chicken on medium-high heat for about 5-6 minutes per side until cooked through. Let rest before slicing.
  3. Brush corn with olive oil and grill until charred (8-10 minutes), then cut kernels off the cob.
  4. In a bowl, combine grilled corn kernels with cumin, cayenne pepper, cilantro, and lime juice.
  5. Prepare the dressing by whisking together Greek yogurt, lime juice, olive oil, honey (if using), salt, pepper, and garlic powder until smooth.
  6. Assemble bowls with lettuce base topped with sliced chicken, grilled corn mix, cherry tomatoes, onion, and bell pepper.
