- 1 cup water (divided)
- 1 ½ cups sugar
- 1 cup light corn syrup
- ¼ teaspoon salt
- 2 teaspoons vanilla extract
- 1 vanilla bean (seeded)
Instructions
- Prepare the gelatin mixture by sprinkling gelatin over ½ cup of water in a bowl; let it sit.
- In a saucepan, combine sugar, corn syrup, salt, and remaining water; cook until dissolved.
- Increase heat and cook until the mixture reaches 240°F on a candy thermometer.
- In a stand mixer bowl, combine the gelatin mixture with the scraped seeds from the vanilla bean.
- Slowly incorporate the hot sugar syrup into the gelatin while mixing on low speed.
- Increase speed to high and whip for 10–15 minutes until bright white and fluffy.
- Dust a 9×13 inch pan with powdered sugar; pour in marshmallow mixture and smooth evenly.
- Allow marshmallows to set uncovered overnight before cutting into desired shapes.
