  • 1 cup marinated artichokes
  • 1 cup black olives
  • 1 cup stuffed green olives
  • 1 cup pepperoncini
  • 1 cup ham
  • 1 cup salami
  • 1 cup thinly sliced onion
  • 1 cup grated Parmesan cheese
  • 1/2 cup fresh parsley, chopped
  • 3/4 cup olive oil
  • 1/4 cup rice wine vinegar
  • 1/4 cup lemon juice
  • 1 teaspoon garlic, minced
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon salt

Instructions

  1. Cook the pasta according to package directions. Drain and rinse under cold water.
  2. While the pasta cooks, chop the artichokes, olives, pepperoncini, ham, and salami.
  3. In a jar with a lid, combine olive oil, rice wine vinegar, lemon juice, garlic, onion powder, oregano, basil, red pepper flakes, and salt. Shake until well mixed.
  4. In a large bowl or pot with the cooled pasta, add chopped ingredients and half of the dressing. Toss to combine.
  5. Top with parsley and Parmesan cheese. Add remaining dressing and mix again.
  6. Serve immediately or refrigerate for later enjoyment.
