Ingredients
- 1 lb pasta
- 1 cup marinated artichokes
- 1 cup black olives
- 1 cup stuffed green olives
- 1 cup pepperoncini
- 1 cup ham
- 1 cup salami
- 1 cup thinly sliced onion
- 1 cup grated Parmesan cheese
- 1/2 cup fresh parsley, chopped
- 3/4 cup olive oil
- 1/4 cup rice wine vinegar
- 1/4 cup lemon juice
- 1 teaspoon garlic, minced
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon red pepper flakes
- 1 teaspoon salt
Instructions
- Cook the pasta according to package directions. Drain and rinse under cold water.
- While the pasta cooks, chop the artichokes, olives, pepperoncini, ham, and salami.
- In a jar with a lid, combine olive oil, rice wine vinegar, lemon juice, garlic, onion powder, oregano, basil, red pepper flakes, and salt. Shake until well mixed.
- In a large bowl or pot with the cooled pasta, add chopped ingredients and half of the dressing. Toss to combine.
- Top with parsley and Parmesan cheese. Add remaining dressing and mix again.
- Serve immediately or refrigerate for later enjoyment.
