  • 2 1/2 lb zucchini
  • 3/4 cup extra-virgin olive oil
  • 1 cup diced sweet onion
  • 1 1/2 tbsp minced fresh garlic
  • 1 tsp kosher salt
  • 1 tsp ground black pepper
  • Pinch crushed red pepper flakes
  • 1 cup heavy cream
  • 3/4 cup finely grated Romano cheese
  • 2 tbsp chopped fresh basil
  • 2 tbsp chopped fresh oregano
  • 2 tbsp chopped fresh mint
  • 2 tbsp chopped fresh basil (to finish)
  • 2 tbsp chopped fresh oregano (to finish)
  • 2 tbsp chopped fresh mint (to finish)

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and set aside.
  2. Chop zucchini into bite-sized pieces.
  3. In a skillet, heat olive oil over medium heat. Sauté onions until translucent, then add garlic and crushed red pepper flakes.
  4. Stir in zucchini, salt, and pepper; sauté until tender (about 5-7 minutes).
  5. Add heavy cream and Romano cheese; stir until combined and smooth.
  6. Fold in fresh herbs before adding cooked pasta to the skillet and tossing to coat.
  7. Serve hot with extra herbs on top.
