  • 2 tablespoons mayonnaise
  • 2 tablespoons cream cheese
  • 1 tablespoon sour cream (optional)
  • 1 fresh jalapeño, finely diced
  • 1/4 cup shredded sharp cheddar cheese
  • 2 tablespoons cooked crumbled bacon
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Boil the eggs by covering them with cold water in a pot, bringing to a boil, then covering and letting sit off heat for 10-12 minutes. Cool in ice water before peeling.
  2. Halve the cooled eggs and remove yolks into a mixing bowl. Mash yolks until smooth and mix in mayonnaise, cream cheese, sour cream (if using), jalapeños, cheddar cheese, bacon, Dijon mustard, salt, and pepper until well combined.
  3. Fill egg whites with the yolk mixture using a spoon or piping bag.
  4. Garnish with smoked paprika before serving.
