  • 1 ½ lbs ground pork
  • 1 large egg
  • ½ cup seasoned panko breadcrumbs
  • 4 cloves garlic (minced)
  • ¼ cup sliced scallions
  • 2 tablespoons jerk seasoning
  • 1 can (14 oz) full-fat coconut milk
  • 3 teaspoons Jamaican curry powder

Instructions

  1. In a large bowl, mix ground pork, egg, breadcrumbs, minced garlic, scallions, jerk seasoning, salt, and pepper until just combined.
  2. Form the mixture into approximately 20–22 meatballs and place them on a baking sheet.
  3. Heat butter and olive oil in a non-stick skillet over medium heat. Brown the meatballs for about 3 minutes per side; set aside.
  4. Sauté shallots and garlic in the same skillet until fragrant, then add bell peppers and cook until softened.
  5. Stir in curry powder followed by coconut milk. Bring to a boil then reduce heat.
  6. Add meatballs back into the skillet, cover, and simmer for 20–25 minutes until cooked through.
