Ingredients
- 14 oz ground pork
- 1 egg
- 2 small coriander roots
- 2 tsp black peppercorns
- 2 cloves garlic
- 1/4 cup finely diced carrots
- 2 tbsp chopped green onions
- 2 dried shiitake mushrooms (soaked and chopped)
- 3 tbsp golden mountain sauce
- 1 1/2 tbsp white sugar
- 2 1/2 tbsp oyster sauce

Instructions
- Prepare the spice mixture by crushing coriander roots, black peppercorns, and garlic in a mortar and pestle until finely blended.
- In a mixing bowl, combine golden mountain sauce, white sugar, sesame oil, and oyster sauce; stir until mixed.
- In a blender or food processor, add ground pork, sauce mixture, egg, and cornstarch; pulse until smooth.
- Transfer the filling to a large bowl and mix well with the crushed spices and diced vegetables.
- Shape the dumplings by placing a wrapper over a spoon’s concave side, adding filling in the center, moistening edges with water, folding up sides to seal.
- Steam the dumplings lined with parchment paper for about 10 minutes until translucent.
