  • 14 oz ground pork
  • 1 egg
  • 2 small coriander roots
  • 2 tsp black peppercorns
  • 2 cloves garlic
  • 1/4 cup finely diced carrots
  • 2 tbsp chopped green onions
  • 2 dried shiitake mushrooms (soaked and chopped)
  • 3 tbsp golden mountain sauce
  • 1 1/2 tbsp white sugar
  • 2 1/2 tbsp oyster sauce
  • Dumpling wrappers

Instructions

  1. Prepare the spice mixture by crushing coriander roots, black peppercorns, and garlic in a mortar and pestle until finely blended.
  2. In a mixing bowl, combine golden mountain sauce, white sugar, sesame oil, and oyster sauce; stir until mixed.
  3. In a blender or food processor, add ground pork, sauce mixture, egg, and cornstarch; pulse until smooth.
  4. Transfer the filling to a large bowl and mix well with the crushed spices and diced vegetables.
  5. Shape the dumplings by placing a wrapper over a spoon’s concave side, adding filling in the center, moistening edges with water, folding up sides to seal.
  6. Steam the dumplings lined with parchment paper for about 10 minutes until translucent.
