  • 1 pound fresh strawberries (divided into 2 cups and ¾ cup)
  • ¼ cup cane or brown sugar
  • Squeeze of lemon juice
  • 23 cups unsweetened non-dairy milk

Instructions

  1. Macerate ¾ cup of diced strawberries with 1 tablespoon of sugar in a bowl. Set aside.
  2. In a saucepan, combine the remaining 2 cups of diced strawberries, 3 tablespoons of sugar, and lemon juice. Boil briefly, then simmer for about 10 minutes until syrupy.
  3. Cool the strawberry syrup in the fridge.
  4. In a glass, mix 2-3 tablespoons of syrup with ¾ cup non-dairy milk and ice if desired. Top with macerated strawberries and stir gently to combine.
