  • 5 oz butter (cubed)
  • 1 1/4 cups granulated sugar
  • 1/2 cup + 6 tbsp unsweetened cocoa powder
  • 1/2 tsp salt
  • 1/2 tsp vanilla extract
  • 2 large eggs
  • 1/2 cup flour
  • 1 cup white chocolate chips
  • 3/4 cup heavy cream (divided)
  • 1 1/4 tsp unflavored powdered gelatin (1/2 packet)
  • 1 tbsp cold water
  • 1 1/2 tsp strawberry extract
  • Red food coloring
  • 1/3 cup milk chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×9 inch baking pan.
  2. In a mixing bowl, cream together cubed butter and sugar until light and fluffy. Mix in cocoa powder, salt, vanilla extract, eggs, and flour until just combined. Pour into the prepared pan and bake for about 25-30 minutes.
  3. Allow brownies to cool completely on a wire rack.
  4. Melt white chocolate chips with 3/4 cup heavy cream in a double boiler. Dissolve gelatin in cold water and mix it into the melted chocolate mixture.
  5. Whip remaining heavy cream until soft peaks form; gently fold into the chocolate mixture along with strawberry extract until smooth.
  6. Spread mousse over cooled brownies and refrigerate for at least one hour to set.
  7. For ganache, heat milk chocolate chips with remaining heavy cream until melted; pour over chilled mousse layer.
  8. Chill again until set, cut into squares, and serve.
